Famous for its thick, dark appearance, Kurosu, the balsamic vinegar of Japan, is naturally brewed from the whole grain of brown rice. The fermentation process takes two to three years buried underground. Like balsamic vinegar, Kurosu is used to produce high quality dishes. Use for salad dressings, marinades, pickling mixtures, sauces, dips and more.

The small town of Yaotsu in Gifu Prefecture is home to Rinkosan, a central mountain and namesake for this black vinegar. This vinegar is versatile and can be paired with many dishes, from grilled meats and dumplings, to lighter fare.
