Dried Japanese chillies are slender and narrow, about five centimetres long with a pointed tip. When dried, their skins turn a rusty orange-red colour with a glossy sheen. They are often mistaken for arbol chillies, but they are much milder in flavour and have fleshier flesh. Dried Japanese chilli peppers have a distinctive, clean, biting flavour and a medium spiciness that lingers on the palate.

Dried Japanese chili peppers in powdered form can be used in a similar way to cayenne pepper for a small dose of pure spiciness. Traditionally part of Sichuan, Hunan, Thai and other Asian cuisines, where it is used to complement flavours such as coriander, basil, garlic, ginger, sesame and lemongrass. It can be added crushed or whole to stir-fries, sauces, gravies and chutneys. Gently heat chillies in neutral oil to release flavour and flavour vinaigrettes and marinades.
